Zucchini Noodle Pad Thai with shrimp is a delightful twist on the classic Thai dish, using spiralized zucchini instead of traditional rice noodles for a lighter and healthier option.


Ingredients

  • Zucchini: 4 medium-sized, spiralized into noodles.
  • Shrimp: 1 lb, peeled and deveined.
  • Eggs: 2 large, scrambled.
  • Peanuts: 1/2 cup, chopped.
  • Bean sprouts: 1 cup.
  • Green onions: 1/2 cup, sliced.
  • Garlic: 3 cloves, minced.
  • Tamarind paste: 2 tablespoons.
  • Fish sauce: 3 tablespoons.
  • Lime juice: 2 tablespoons.
  • Chili flakes: 1 teaspoon.
  • Olive oil: 2 tablespoons.
  • Salt: to taste.

Instructions

  1. Spiralize the zucchini and place the noodles on a paper towel to absorb excess moisture.
  2. Marinate the shrimp with a pinch of salt and a splash of lime juice for about 10 minutes.
  3. Heat 1 tablespoon of olive oil in a skillet and cook the shrimp for 2-3 minutes on each side until pink and opaque, then set aside.
  4. In the same skillet, add another tablespoon of olive oil, scramble the eggs, and set aside with the shrimp.
  5. Sauté minced garlic in the skillet for about 30 seconds, then add zucchini noodles and stir-fry for 2-3 minutes.
  6. Mix tamarind paste, fish sauce, lime juice, and chili flakes in a bowl, then pour over the zucchini noodles and toss to coat.
  7. Add the cooked shrimp and scrambled eggs back into the skillet, toss for another 2 minutes, then fold in bean sprouts and green onions.
  8. Serve warm, garnished with chopped peanuts and lime wedges.
