Ingredients
- Zucchini: 4 medium-sized, spiralized into noodles.
- Shrimp: 1 lb, peeled and deveined.
- Eggs: 2 large, scrambled.
- Peanuts: 1/2 cup, chopped.
- Bean sprouts: 1 cup.
- Green onions: 1/2 cup, sliced.
- Garlic: 3 cloves, minced.
- Tamarind paste: 2 tablespoons.
- Fish sauce: 3 tablespoons.
- Lime juice: 2 tablespoons.
- Chili flakes: 1 teaspoon.
- Olive oil: 2 tablespoons.
- Salt: to taste.
Instructions
- Spiralize the zucchini and place the noodles on a paper towel to absorb excess moisture.
- Marinate the shrimp with a pinch of salt and a splash of lime juice for about 10 minutes.
- Heat 1 tablespoon of olive oil in a skillet and cook the shrimp for 2-3 minutes on each side until pink and opaque, then set aside.
- In the same skillet, add another tablespoon of olive oil, scramble the eggs, and set aside with the shrimp.
- Sauté minced garlic in the skillet for about 30 seconds, then add zucchini noodles and stir-fry for 2-3 minutes.
- Mix tamarind paste, fish sauce, lime juice, and chili flakes in a bowl, then pour over the zucchini noodles and toss to coat.
- Add the cooked shrimp and scrambled eggs back into the skillet, toss for another 2 minutes, then fold in bean sprouts and green onions.
- Serve warm, garnished with chopped peanuts and lime wedges.
