  • Optional: Use coconut sugar, maple syrup, or unsweetened applesauce for substitutions

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. In a large mixing bowl, combine all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon. Whisk until evenly mixed.
  3. In another bowl, mix the sugars with the vegetable oil. Whisk in the eggs one at a time, then add the vanilla extract and grated zucchini. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients and fold gently using a spatula. Be careful not to over-mix.
  5. Fold in the chocolate chips.
  6. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full. Optionally, sprinkle some chocolate chips on top.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Cool the muffins in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
