Description
Fudgy zucchini brownies made with cocoa powder, chocolate chips, and grated zucchini. A moist, rich, and secretly healthy dessert.

- 2 tablespoons ground flaxseed
- 5 tablespoons water
- 1 1/4 cups all-purpose flour, spooned and leveled
- 1 cup granulated sugar
- 2/3 cup cocoa powder, sifted
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1/2 cup melted coconut oil
- 1 teaspoon vanilla extract
- 2 cups grated zucchini (don’t drain or squeeze)
- 1/2 cup dark chocolate chips (plus more for topping)
- Flaky sea salt (optional for sprinkling)
Instructions
- Preheat oven to 325°F (165°C) and grease an 8×8-inch baking dish. Line with parchment paper.
- Combine ground flaxseed and water in a small bowl. Let sit for 5 minutes to thicken.
- In a medium bowl, whisk together flour, sugar, cocoa powder, baking powder, and sea salt.
- In a large bowl, whisk together melted coconut oil and vanilla. Stir in the flaxseed mixture and grated zucchini.
- Gradually mix the dry ingredients into the wet mixture. Let rest for a minute to hydrate, then stir again.
- Fold in 1/2 cup of chocolate chips, reserving a few for topping.
- Pour batter into the prepared baking dish, smooth the top, and sprinkle remaining chocolate chips and flaky sea salt (if using).
- Bake for 45–50 minutes or until a toothpick inserted comes out with moist crumbs.
- Let cool in the pan for at least 1 hour before slicing.
Notes
- Do not drain or squeeze the zucchini—its moisture is key to a fudgy texture.
- For a vegan version, this recipe already uses flax eggs and plant-based oil.
- You can substitute coconut oil with vegetable oil or applesauce.
- To reduce sugar, use a 1:1 sugar substitute like monk fruit or erythritol.
- Store at room temperature for 3 days or refrigerate for up to a week.
- Freeze individually wrapped slices for up to 3 months.
