Instructions

  1. Preheat oven to 350°F (175°C). Wash, trim, and grate zucchini; then wring out excess moisture.
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat granulated sugar, brown sugar, and eggs until smooth. Add oil and vanilla, then stir in grated zucchini.
  4. Pour wet ingredients into dry ingredients and gently fold until just combined. Fold in nuts if using.
  5. Fill muffin tin lined with paper liners or greased cups about 3/4 full.
  6. Bake 18-22 minutes or until a toothpick inserted in the center comes out clean.
