Description

These Yellow Birthday Cupcakes are soft, buttery, and moist, topped with rich chocolate buttercream and colorful sprinkles. Perfect for any celebration, they’re easy to make and fun to decorate.

Ingredients

Scale
  • 1 and 3/4 cups cake flour, spooned and leveled
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1/3 cup sour cream, at room temperature
  • 2 and 1/2 teaspoons pure vanilla extract
  • 3/4 cup whole milk, at room temperature
  • Chocolate buttercream for frosting
  • Sprinkles for garnish

Instructions

  1. Preheat oven to 350°F (177°C) and line a 12-count muffin pan with cupcake liners. Prepare a second pan with two liners if needed.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and sugar together on high speed for about 2 minutes until smooth and creamy. Scrape down the sides as needed.
  4. Add the eggs one at a time, mixing well after each. Then mix in the vanilla extract and sour cream until combined.
  5. On low speed, gradually mix in the dry ingredients until just combined. Then slowly add the milk while mixing on low until the batter is smooth.
  6. Fill the cupcake liners about two-thirds full. Bake for 19–22 minutes or until a toothpick inserted comes out clean.
  7. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Frost cooled cupcakes with chocolate buttercream and garnish with sprinkles.
  9. Serve and enjoy!
