- 1/2 cup melted butter
- 1 (8 ounce) block cream cheese, room temperature
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 (3 ounce) box lemon jello mix
- 1/2 cup boiling water
- 1/2 cup cold water
- 1 (12 ounce) can evaporated milk, chilled
Instructions
- Chill the bowl of your stand mixer, whisk attachment, and can of evaporated milk in the freezer for 30 minutes.
- Prepare the crust by combining graham cracker crumbs, sugar, and melted butter. Press the mixture into a 9×13 inch baking dish and reserve 1/4 cup for topping.
- Cream together cream cheese and granulated sugar until smooth. Stir in vanilla extract.
- In a separate bowl, dissolve lemon jello mix in boiling water, then add cold water and refrigerate for a few minutes to cool.
- Whip the chilled evaporated milk until soft peaks form. Add the jello mixture and then the cream cheese mixture. Mix well.
- Pour the filling into the crust, spread evenly, and sprinkle with the reserved graham cracker crumbs.
- Cover with plastic wrap and refrigerate overnight to set.
