  • 2 teaspoons vanilla extract
  • 1 (3 ounce) box lemon jello mix
  • 1/2 cup boiling water
  • 1/2 cup cold water
  • 1 (12 ounce) can evaporated milk, chilled

Instructions

  1. Chill the bowl of your stand mixer, whisk attachment, and can of evaporated milk in the freezer for 30 minutes.
  2. Prepare the crust by combining graham cracker crumbs, sugar, and melted butter. Press the mixture into a 9×13 inch baking dish and reserve 1/4 cup for topping.
  3. Cream together cream cheese and granulated sugar until smooth. Stir in vanilla extract.
  4. In a separate bowl, dissolve lemon jello mix in boiling water, then add cold water and refrigerate for a few minutes to cool.
  5. Whip the chilled evaporated milk until soft peaks form. Add the jello mixture and then the cream cheese mixture. Mix well.
  6. Pour the filling into the crust, spread evenly, and sprinkle with the reserved graham cracker crumbs.
  7. Cover with plastic wrap and refrigerate overnight to set.
