- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons sugar
- 16 oz cream cheese, softened
- 1 cup white chocolate, melted
- ⅔ cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1 cup fresh raspberries
- ⅓ cup sugar (for raspberry swirl)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then cool.
- Beat softened cream cheese until smooth. Gradually mix in melted white chocolate, sugar, eggs (one at a time), vanilla extract, and sour cream until smooth.
- Prepare raspberry swirl: Cook raspberries, sugar, lemon juice, and cornstarch in a pan until thickened. Cool.
- Layer half of the cheesecake filling in the pan. Drizzle with raspberry swirl and swirl with a knife. Add the remaining filling and swirl again. Bake for 50-60 minutes, until edges are set but center is slightly jiggly. Cool in the oven with door slightly ajar for 1 hour. Chill for at least 4 hours before serving.
