Delicious white chocolate raspberry cheesecake bars.
Ingredients

- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup white chocolate chips
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup raspberry puree
- 1/4 cup fresh raspberries
Instructions
- Preheat the oven to 325°F (163°C).
- Mix graham cracker crumbs, sugar, and melted butter in a bowl.
- Press the mixture into the bottom of a baking pan.
- Melt white chocolate chips and set aside to cool.
- Beat cream cheese and sugar until smooth.
- Add eggs and vanilla, mix until combined.
- Stir in melted white chocolate.
- Pour half of the cheesecake mixture over the crust.
- Spread raspberry puree on top.
- Add the remaining cheesecake mixture and swirl with a knife.
- Top with fresh raspberries.
- Bake for 30-35 minutes.
- Cool completely before cutting into bars.
Notes
- Store in the refrigerator for up to 5 days.
- Can be frozen for up to 2 months.
- Use fresh raspberries for best flavor.
