Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup white chocolate chips
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup raspberry puree
  • 1/4 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl.
  3. Press the mixture into the bottom of a baking pan.
  4. Melt white chocolate chips and set aside to cool.
  5. Beat cream cheese and sugar until smooth.
  6. Add eggs and vanilla, mix until combined.
  7. Stir in melted white chocolate.
  8. Pour half of the cheesecake mixture over the crust.
  9. Spread raspberry puree on top.
  10. Add the remaining cheesecake mixture and swirl with a knife.
  11. Top with fresh raspberries.
  12. Bake for 30-35 minutes.
  13. Cool completely before cutting into bars.

  • Can be frozen for up to 2 months.
