- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 1 cup white chocolate chips
- 1 cup fresh raspberries (or frozen if out of season)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 or 9×13 inch pan with parchment paper.
- Melt the butter and combine it with brown sugar and granulated sugar. Stir until creamy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Sift together flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the white chocolate chips and gently incorporate the raspberries.
- Pour the batter into the prepared pan, spread evenly, and bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Cool the blondies in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For a vegan option, use flax eggs and coconut oil.
- If you prefer less sweetness, reduce the granulated sugar by half.
- Make sure not to overmix the batter to keep the blondies soft and chewy.
- You can freeze these blondies for up to three months by wrapping them in plastic wrap and storing them in a freezer-safe container.
