A refreshing salad featuring white beans and bulgur with fresh herbs.
Ingredients

- 1 cup cooked white beans
- 1/2 cup bulgur wheat
- 1 cup chopped parsley
- 1/2 cup chopped mint
- 1 cup diced tomatoes
- 1/4 cup diced cucumber
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Cook bulgur wheat according to package instructions.
- In a bowl, combine white beans, parsley, mint, tomatoes, and cucumber.
- Add the cooked bulgur to the bowl.
- In a separate bowl, whisk olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and mix well.
- Chill in the refrigerator for 30 minutes before serving.

- Serve cold for best flavor.
- Can be stored in the refrigerator for up to 3 days.
- Add feta cheese for extra flavor if desired.
