Ingredients

  • 1 cup cooked white beans
  • 1/2 cup bulgur wheat
  • 1 cup chopped parsley
  • 1/2 cup chopped mint
  • 1 cup diced tomatoes
  • 1/4 cup diced cucumber
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook bulgur wheat according to package instructions.
  2. In a bowl, combine white beans, parsley, mint, tomatoes, and cucumber.
  3. Add the cooked bulgur to the bowl.
  4. In a separate bowl, whisk olive oil, lemon juice, salt, and pepper.
  5. Pour dressing over the salad and mix well.
  6. Chill in the refrigerator for 30 minutes before serving.
