Description

  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/2 cup vegetable oil or melted butter
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup molasses or honey
  • 1 tbsp freshly grated ginger
  • 1/2 cup hot water
  • 3/4 cup chopped Medjool dates
  • Optional toppings: whipped cream or Greek yogurt, chopped candied ginger

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and line an 8-inch cake pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, and cloves.
  3. In a large bowl, whisk oil or melted butter with brown sugar and eggs until smooth. Stir in molasses (or honey) and freshly grated ginger.
  4. Gradually mix the dry ingredients into the wet ingredients. Add hot water and mix until just smooth. Fold in chopped dates.
  5. Pour batter into prepared pan and smooth the top. Bake for 35–40 minutes or until a toothpick inserted comes out clean.
  6. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Serve plain or topped with whipped cream, Greek yogurt, or candied ginger.
