Description
A cozy, spiced cake made with ground ginger, cinnamon, cloves, and sweet chopped Medjool dates. Moist, rich, and perfect for chilly days.

- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/2 cup vegetable oil or melted butter
- 3/4 cup brown sugar
- 2 large eggs
- 1/2 cup molasses or honey
- 1 tbsp freshly grated ginger
- 1/2 cup hot water
- 3/4 cup chopped Medjool dates
- Optional toppings: whipped cream or Greek yogurt, chopped candied ginger
Instructions
- Preheat the oven to 350°F (175°C) and grease and line an 8-inch cake pan with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, and cloves.
- In a large bowl, whisk oil or melted butter with brown sugar and eggs until smooth. Stir in molasses (or honey) and freshly grated ginger.
- Gradually mix the dry ingredients into the wet ingredients. Add hot water and mix until just smooth. Fold in chopped dates.
- Pour batter into prepared pan and smooth the top. Bake for 35–40 minutes or until a toothpick inserted comes out clean.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Serve plain or topped with whipped cream, Greek yogurt, or candied ginger.
Notes
- Use fresh ginger for a more vibrant, spicy flavor.
- Do not overmix the batter to keep the cake tender.
- Can be stored at room temperature or frozen in slices.
- Swap molasses for honey or maple syrup if needed.
