- 1 cup (150g) dried figs, chopped
- 3/4 cup (180ml) boiling water
- 1 tsp baking soda
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 1 large orange
- 1 1/4 cups (160g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/3 cup (80ml) orange juice (freshly squeezed)
- 1/3 cup (65g) granulated sugar
- 1 tsp orange zest
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
- In a separate bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg.
- In a bowl, combine chopped dried figs with baking soda and pour boiling water over them. Let soak for about 10 minutes.
- Cream together softened butter and brown sugar until fluffy. Beat in eggs one at a time, then add vanilla extract and orange zest. Stir in the fig mixture.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared cake pan and bake for 35 to 40 minutes, or until a toothpick inserted comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Poke holes in the top and pour warm orange syrup over it.
