  • 1 tsp baking soda
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 1 large orange
  • 1 1/4 cups (160g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/3 cup (80ml) orange juice (freshly squeezed)
  • 1/3 cup (65g) granulated sugar
  • 1 tsp orange zest

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
  2. In a separate bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a bowl, combine chopped dried figs with baking soda and pour boiling water over them. Let soak for about 10 minutes.
  4. Cream together softened butter and brown sugar until fluffy. Beat in eggs one at a time, then add vanilla extract and orange zest. Stir in the fig mixture.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into the prepared cake pan and bake for 35 to 40 minutes, or until a toothpick inserted comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Poke holes in the top and pour warm orange syrup over it.
