Description

Warm Spiced Date Cake with Orange Glaze is a moist and flavorful dessert that combines the sweetness of dates with warm spices and a refreshing orange glaze.

  • 1 1/2 cups (225g) pitted dates, chopped
  • 1/2 cup (120ml) freshly squeezed orange juice (about 23 oranges)
  • Zest of 2 oranges
  • 1/2 cup (120ml) vegetable oil
  • 3 large eggs
  • 1 cup (200g) brown sugar, packed
  • 1 3/4 cups (220g) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 cup (60ml) freshly squeezed orange juice
  • 2 tbsp (30g) powdered sugar
  • 1/2 cup (60g) chopped pecans
  • 2 tbsp (25g) brown sugar
  • 1 tbsp (14g) cold butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Soak the chopped dates in freshly squeezed orange juice for about 10 minutes.
  3. Sift together the all-purpose flour, baking powder, baking soda, salt, and spices in a bowl.
  4. In a large mixing bowl, whisk together the vegetable oil, eggs, brown sugar, and orange zest until smooth.
  5. Fold in the soaked dates into the wet mixture, then gradually add the dry ingredients and mix until just combined.
  6. Pour the batter into a prepared 9-inch round cake pan and sprinkle the pecan crunch topping over it.
  7. Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean.
  8. Prepare the orange glaze by mixing the remaining orange juice and powdered sugar until smooth.
  9. Allow the cake to cool for 10 minutes, then transfer to a wire rack and drizzle with the orange glaze.
