- 1 1/2 cups (225g) pitted dates, chopped
- 1/2 cup (120ml) freshly squeezed orange juice (about 2–3 oranges)
- Zest of 2 oranges
- 1/2 cup (120ml) vegetable oil
- 3 large eggs
- 1 cup (200g) brown sugar, packed
- 1 3/4 cups (220g) all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 cup (60ml) freshly squeezed orange juice
- 2 tbsp (30g) powdered sugar
- 1/2 cup (60g) chopped pecans
- 2 tbsp (25g) brown sugar
- 1 tbsp (14g) cold butter, cubed
Instructions
- Preheat your oven to 350°F (175°C).
- Soak the chopped dates in freshly squeezed orange juice for about 10 minutes.
- Sift together the all-purpose flour, baking powder, baking soda, salt, and spices in a bowl.
- In a large mixing bowl, whisk together the vegetable oil, eggs, brown sugar, and orange zest until smooth.
- Fold in the soaked dates into the wet mixture, then gradually add the dry ingredients and mix until just combined.
- Pour the batter into a prepared 9-inch round cake pan and sprinkle the pecan crunch topping over it.
- Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean.
- Prepare the orange glaze by mixing the remaining orange juice and powdered sugar until smooth.
- Allow the cake to cool for 10 minutes, then transfer to a wire rack and drizzle with the orange glaze.

- Medjool dates are recommended for their rich flavor and moisture.
