For the citrus glaze:
- 100g (1/2 cup) powdered sugar
- 2 tbsp fresh orange juice

Instructions
- Preheat your oven to 180°C (350°F) and grease a 20cm (8-inch) baking dish.
- In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and desiccated coconut.
- In a separate bowl, whisk together the melted butter and brown sugar until smooth, then add the eggs, milk, and vanilla extract.
- Gently fold the wet mixture into the dry ingredients, then fold in the chopped pineapple.
- Pour the batter into the greased baking dish and smooth the top.
- Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the pudding cool slightly, then prepare the citrus glaze by whisking together the powdered sugar, orange juice, and lemon zest.
- Drizzle the glaze over the warm pudding just before serving.
Notes
- Be careful not to overmix the batter to keep the pudding light and fluffy.
- Use a kitchen scale for accurate measurements, especially for flour and sugar.
- Store any leftovers in the refrigerator for up to three days.
- For a vegan version, substitute eggs with flaxseed meal and use plant-based milk and butter.
