Ingredients

  • 150g (3/4 cup) desiccated coconut
  • 100g (1/2 cup) unsalted butter, melted
  • 100g (1/2 cup) brown sugar, packed
  • 2 large eggs
  • 150ml (2/3 cup) whole milk
  • 180g (1 1/2 cups) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract

For the citrus glaze:

  • 100g (1/2 cup) powdered sugar
  • 2 tbsp fresh orange juice
  • 1 tsp lemon zest

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a 20cm (8-inch) baking dish.
  2. In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and desiccated coconut.
  3. In a separate bowl, whisk together the melted butter and brown sugar until smooth, then add the eggs, milk, and vanilla extract.
  4. Gently fold the wet mixture into the dry ingredients, then fold in the chopped pineapple.
  5. Pour the batter into the greased baking dish and smooth the top.
  6. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the pudding cool slightly, then prepare the citrus glaze by whisking together the powdered sugar, orange juice, and lemon zest.
  8. Drizzle the glaze over the warm pudding just before serving.
