- 200g (1 ½ cups) grated carrots
- 175g (1 cup) pitted dates, chopped
- 1 tsp baking soda
- 200ml (¾ cup + 1 tbsp) boiling water
- 100g (½ cup) unsalted butter, softened
- 125g (⅔ cup) light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 175g (1 ⅓ cups) all-purpose flour
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp salt
- 1 tsp baking powder
- 100ml (⅓ cup + 1 tbsp) water
- 100g (½ cup) granulated sugar
- 1½ tbsp freshly grated ginger
- ½ tsp ground ginger
Instructions
- Wash and peel the carrots, then grate them finely and set aside.
- Sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground ginger, and salt in a separate bowl.
- Cream the softened unsalted butter and light brown sugar together until light and fluffy, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and grated carrots.
- Gently fold the dry mixture into the wet mixture, then add the soaked date mixture, including the liquid.
- Preheat the oven to 180°C (350°F). Pour the batter into a prepared baking dish and bake for 30-35 minutes.
- While the pudding is baking, prepare the ginger syrup by combining water, granulated sugar, freshly grated ginger, and ground ginger in a saucepan. Bring to a gentle boil and simmer until slightly thickened.
- Once the pudding is baked, pour the hot ginger syrup over it while still warm and serve immediately.
