  • 175g (1 cup) pitted dates, chopped
  • 1 tsp baking soda
  • 200ml (¾ cup + 1 tbsp) boiling water
  • 100g (½ cup) unsalted butter, softened
  • 125g (⅔ cup) light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 175g (1 ⅓ cups) all-purpose flour
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp salt
  • 1 tsp baking powder
  • 100ml (⅓ cup + 1 tbsp) water
  • 100g (½ cup) granulated sugar
  • 1½ tbsp freshly grated ginger
  • ½ tsp ground ginger

Instructions

  1. Wash and peel the carrots, then grate them finely and set aside.
  2. Sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground ginger, and salt in a separate bowl.
  3. Cream the softened unsalted butter and light brown sugar together until light and fluffy, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and grated carrots.
  4. Gently fold the dry mixture into the wet mixture, then add the soaked date mixture, including the liquid.
  5. Preheat the oven to 180°C (350°F). Pour the batter into a prepared baking dish and bake for 30-35 minutes.
  6. While the pudding is baking, prepare the ginger syrup by combining water, granulated sugar, freshly grated ginger, and ground ginger in a saucepan. Bring to a gentle boil and simmer until slightly thickened.
  7. Once the pudding is baked, pour the hot ginger syrup over it while still warm and serve immediately.
