  • 190g (1 1/2 cups) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 120ml (1/2 cup) freshly squeezed orange juice
  • 100g (1/2 cup) powdered sugar
  • Zest of 1 orange

Instructions

  1. Preheat your oven to 175°C (350°F) and prepare an 8-inch round cake pan by greasing and lining it with parchment paper.
  2. In a medium bowl, combine chopped dates, boiling water, and baking soda. Let sit for 15 minutes.
  3. In a large mixing bowl, cream together softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Add the date mixture (including the liquid) to the butter and sugar mixture and mix until well combined.
