- 2 ripe bananas (about 200g), mashed
- 1 cup (150g) chopped dates
- 3/4 cup (90g) chopped walnuts, toasted
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/4 cups (160g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
For the Orange Syrup:
- 1/2 cup (120ml) fresh orange juice
- 1/3 cup (65g) brown sugar
- Zest of 1 orange
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan.
- Mash the bananas in a large bowl and combine with chopped dates.
- In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and cinnamon.
- Cream together the mashed bananas, dates, softened butter, and brown sugar, then add eggs and vanilla extract.
- Gradually mix the dry ingredients into the wet mixture and fold in the walnuts.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 40–45 minutes, checking for doneness with a toothpick.
- Prepare the orange syrup by boiling orange juice, brown sugar, and zest in a saucepan.
- Poke holes in the cooled cake and drizzle the warm orange syrup over it.
Notes
- Use very ripe bananas for better sweetness and moisture.
- Store leftovers in an airtight container at room temperature for up to three days.
- Freeze individual slices for longer storage.
