  • 1/4 cup (60ml) vegetable oil
  • 2 large eggs
  • 1/2 cup (120ml) unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 1/2 cups (180g) peeled, diced apples (about 2 medium apples)
  • 1/2 cup (100g) brown sugar (for caramel sauce)
  • 1/4 cup (60g) unsalted butter (for caramel sauce)
  • 1/4 cup (60ml) heavy cream (for caramel sauce)
  • Pinch of salt (for caramel sauce)
  • 1/2 tsp vanilla extract (for caramel sauce)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch cake pan with parchment paper.
  2. In a large bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat brown sugar, vegetable oil, eggs, applesauce, and vanilla until smooth.
  4. Gently combine wet and dry ingredients until just mixed. Fold in diced apples.
  5. Pour batter into pan, smooth top, and bake for 30-35 minutes. Test doneness with a toothpick.
  6. Let cake cool slightly in pan, then transfer to a wire rack.
  7. For caramel sauce, melt butter with brown sugar and heavy cream over medium heat, stirring until smooth and slightly thickened.
  8. Remove from heat, stir in salt and vanilla extract.
  9. Serve cake slices warm, drizzled with caramel sauce.
