Ingredients
- Fresh bell peppers: 1 cup, sliced (mix colors for a vibrant look)
- Broccoli florets: 1 cup (about 150 grams)
- Snap peas: 1 cup (about 100 grams)
- Carrots: 1 cup, julienned (about 2 medium carrots)
- Garlic: 3 cloves, minced
- Ginger: 1 tablespoon, freshly grated
- Soy sauce: 3 tablespoons
- Peanut butter: 1/4 cup (smooth or crunchy, based on preference)
- Sesame oil: 2 tablespoons
- Crushed peanuts: 1/4 cup (for garnish)
- Olive oil: 2 tablespoons (for cooking)
- Salt and pepper: to taste
Instructions
- Wash all vegetables thoroughly and slice the bell peppers into thin strips.
- Cut broccoli into small florets and trim the ends of the snap peas. Julienne the carrots into thin matchstick pieces.
- In a small bowl, combine peanut butter, soy sauce, sesame oil, minced garlic, and grated ginger. Whisk until smooth, adding warm water if needed.
- In a large skillet or wok, heat olive oil over medium-high heat. Add julienned carrots and cook for 2 minutes.
- Add broccoli, bell peppers, and snap peas to the skillet. Stir-fry for an additional 4-5 minutes until vegetables are tender-crisp.
- Pour the peanut sauce over the stir-fried vegetables and toss to coat. Cook for another 2-3 minutes to warm the sauce.
- Transfer to a serving bowl and sprinkle with crushed peanuts. Serve on its own or with steamed jasmine rice or quinoa.
