Ingredients
- Raw cashews: 1 cup, soaked for at least 4 hours
- Roasted red peppers: 1/2 cup, either jarred or homemade
- Artichoke hearts: 1/2 cup, canned or frozen, drained and chopped
- Black olives: 1/4 cup, sliced
- Fresh basil leaves: 1/4 cup, chopped
- Garlic: 2 cloves, minced
- Lemon juice: 2 tablespoons, freshly squeezed
- Italian seasoning: 1 teaspoon
- Salt and pepper: to taste
Instructions
- Prepare the vegetables by rinsing the basil and thawing the artichokes if frozen.
- Mix the base by blending soaked cashews, roasted red peppers, garlic, lemon juice, Italian seasoning, salt, and pepper until smooth.
- Combine the base with chopped artichoke hearts, sliced black olives, and chopped basil in a mixing bowl.
- Chill the dip for about 30 minutes or serve warm with your favorite dippers.

- Can be frozen for about 2 months; thaw in the refrigerator before serving.
