Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with liners or grease with cooking spray.
- Mash the ripe bananas in a large mixing bowl, leaving some small lumps.
- Mix in melted coconut oil, maple syrup, and vanilla extract into the mashed bananas until well combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently. Fold in optional mix-ins like nuts or chocolate chips.
- Fill muffin cups about 3/4 full with the batter. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
