Instructions
- Stir heavy cream and gelatin in a small bowl; let sit for 5 minutes to bloom.
- Heat whole milk, honey, vanilla bean seeds, and kosher salt in a saucepan over medium heat until honey dissolves and mixture simmers gently; remove from heat.
- Add gelatin mixture to warm milk and stir until melted. Whisk in Greek yogurt until smooth.
- Divide mixture evenly among six 3-ounce ramekins, cover with plastic wrap, and chill in the refrigerator for at least 4 hours or up to 1 day.
