  • 1 tablespoon unflavored gelatin
  • 1/4 cup milk
  • 1 cup fresh raspberries
  • Mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Mix flour, powdered sugar, and salt in a bowl. Add softened butter and blend until coarse crumbs form. Add egg yolk and cold water, mixing until dough holds together. Wrap in plastic and refrigerate for 30 minutes.
  2. Roll out dough to 1/8 inch thick, then transfer it to a tart pan. Press the dough into the bottom and sides. Prick the bottom with a fork. Bake for 15-20 minutes until golden. Let it cool completely.
  3. Dissolve gelatin in milk and set aside for 5 minutes. Whip heavy cream with sugar and vanilla extract until soft peaks form. Gently warm gelatin mixture over low heat, then fold it into the whipped cream until combined.
  4. Once the crust is cool, fill it with the vanilla cream filling, spreading it evenly. Refrigerate for at least 2 hours until set. Top with fresh raspberries and optionally garnish with mint leaves. Serve chilled.
