- 3 large egg yolks
- 2/3 cup key lime juice
- One 14-ounce can full-fat sweetened condensed milk
- 1 teaspoon lime zest
- Hot water (for the water bath)
- 2 full sheets graham crackers
- 1 tablespoon unsalted butter
- 1 teaspoon packed light or dark brown sugar
- Whipped cream or meringue (optional)
- Lime slices (optional)
- Chopped macadamia nuts or pecans (optional)
- Raspberries (optional)
- Edible florals (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease four 6-ounce ramekins.
- In a bowl, beat egg yolks until pale, then mix in key lime juice, sweetened condensed milk, and lime zest.
- Pour the lime filling into the ramekins.
- Add hot water to a baking pan to create a water bath, then bake for 17-20 minutes until slightly jiggly.
- Cool ramekins on a wire rack for an hour then refrigerate for another hour.
- Prepare the crust by crushing graham crackers and toasting with melted butter and brown sugar for about 4 minutes.
- After pies have cooled, sprinkle toasted crust on top, and add optional whipped cream or garnishes.
Notes
Serve directly in ramekins or inverted onto dessert plates. Use fresh ingredients for the best flavor.
