- 120g honey (about 1/2 cup)
- 3 large eggs
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 60ml olive oil (about 1/4 cup)
- Zest of 1 lemon
- For the Glaze:
- 85g honey (about 1/4 cup)
- 15ml lemon juice (about 1 tablespoon)
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 175°C (350°F) and line an 8-inch round or square cake pan with parchment paper.
- In a large mixing bowl, whisk together eggs, honey, olive oil, and vanilla extract until smooth.
- Add ground walnuts, cinnamon, baking soda, salt, and lemon zest. Mix until a thick batter forms.
- Pour the batter into the prepared pan and smooth the top. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
- While the cake bakes, prepare the glaze by gently heating honey, lemon juice, and vanilla extract in a small saucepan over low heat. Stir until well combined and set aside to cool slightly.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Once completely cool, drizzle the glaze over the top and allow it to soak in.
