Description

  • 120g honey (about 1/2 cup)
  • 3 large eggs
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 60ml olive oil (about 1/4 cup)
  • Zest of 1 lemon
  • For the Glaze:
  • 85g honey (about 1/4 cup)
  • 15ml lemon juice (about 1 tablespoon)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 175°C (350°F) and line an 8-inch round or square cake pan with parchment paper.
  2. In a large mixing bowl, whisk together eggs, honey, olive oil, and vanilla extract until smooth.
  3. Add ground walnuts, cinnamon, baking soda, salt, and lemon zest. Mix until a thick batter forms.
  4. Pour the batter into the prepared pan and smooth the top. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  5. While the cake bakes, prepare the glaze by gently heating honey, lemon juice, and vanilla extract in a small saucepan over low heat. Stir until well combined and set aside to cool slightly.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Once completely cool, drizzle the glaze over the top and allow it to soak in.
