- 1 cup (160g) fine semolina
- ¾ cup (150g) granulated sugar
- 1 cup (240ml) plain yogurt
- 3 large eggs
- ½ cup (120ml) vegetable oil
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- Zest of 1 lemon
- Zest of 1 orange
- 1 tsp vanilla extract
For the Citrus Syrup:
- 1 cup (200g) sugar
- 1 cup (240ml) water
- Juice of 1 lemon
- Juice of 1 orange
- 1 tbsp rose water (optional)
Instructions
- In a large mixing bowl, whisk together the plain yogurt, granulated sugar, and eggs until smooth.
- Add the vegetable oil, lemon zest, orange zest, and vanilla extract, and whisk until blended.
- In a separate bowl, mix the fine semolina, baking powder, baking soda, and salt.
- Gradually fold the dry mixture into the wet ingredients without overmixing.
- Let the batter rest for about 10 minutes.
- Preheat the oven to 350°F (175°C) and prepare your baking pan.
- Pour the rested batter into the prepared pan and bake for 35 to 40 minutes until golden brown.
- While the cake is baking, prepare the citrus syrup by boiling sugar and water, then simmering for 5 minutes.
- Stir in the lemon juice and orange juice, and add rose water if desired.
- Once the cake is baked, pour the hot citrus syrup over it and let it cool completely in the pan.
- Slice the cake into squares or wedges and serve.
