Ingredients

  • 1 cup (160g) fine semolina
  • ¾ cup (150g) granulated sugar
  • 1 cup (240ml) plain yogurt
  • 3 large eggs
  • ½ cup (120ml) vegetable oil
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tsp vanilla extract

For the Citrus Syrup:

  • 1 cup (200g) sugar
  • 1 cup (240ml) water
  • Juice of 1 lemon
  • Juice of 1 orange
  • 1 tbsp rose water (optional)

Instructions

  1. In a large mixing bowl, whisk together the plain yogurt, granulated sugar, and eggs until smooth.
  2. Add the vegetable oil, lemon zest, orange zest, and vanilla extract, and whisk until blended.
  3. In a separate bowl, mix the fine semolina, baking powder, baking soda, and salt.
  4. Gradually fold the dry mixture into the wet ingredients without overmixing.
  5. Let the batter rest for about 10 minutes.
  6. Preheat the oven to 350°F (175°C) and prepare your baking pan.
  7. Pour the rested batter into the prepared pan and bake for 35 to 40 minutes until golden brown.
  8. While the cake is baking, prepare the citrus syrup by boiling sugar and water, then simmering for 5 minutes.
  9. Stir in the lemon juice and orange juice, and add rose water if desired.
  10. Once the cake is baked, pour the hot citrus syrup over it and let it cool completely in the pan.
  11. Slice the cake into squares or wedges and serve.
