Description

Triple Berry Pie is a delicious dessert filled with strawberries, blueberries, and raspberries, topped with a golden, flaky crust—perfect for any occasion.


Ingredients

  • 2 ½ cups of all-purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 1 cup (2 sticks) of cold unsalted butter, diced
  • 68 tablespoons of ice water
  • 1 cup of strawberries, hulled and sliced
  • 1 cup of blueberries
  • 1 cup of raspberries
  • ¾ cup of granulated sugar
  • 2 tablespoons of cornstarch
  • 1 tablespoon of lemon juice
  • 1 teaspoon of vanilla extract
  • ½ teaspoon of ground cinnamon
  • 1 tablespoon of butter, to dot on top

Instructions

  1. In a bowl, combine flour, salt, and sugar. Add cold diced butter and use a pastry cutter to mix until crumbly. Gradually add ice water, mixing until dough forms. Divide into two discs and refrigerate for 1 hour.
  2. In a mixing bowl, combine strawberries, blueberries, raspberries, sugar, cornstarch, lemon juice, vanilla, and cinnamon. Let the mixture sit for 15-20 minutes to thicken.
  3. Roll out one disc of dough to fit a 9-inch pie pan. Fill with berry mixture and dot with butter.
  4. Roll out the second disc of dough, cover the pie, and seal the edges. Cut slits or create a lattice design. Brush with egg wash and bake at 425°F for 15 minutes, then reduce to 350°F and bake for 30-35 minutes.
  5. Let the pie cool for 2 hours before serving.
