Description
Triple Berry Pie is a delicious dessert filled with strawberries, blueberries, and raspberries, topped with a golden, flaky crust—perfect for any occasion.
Ingredients

- 2 ½ cups of all-purpose flour
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 1 cup (2 sticks) of cold unsalted butter, diced
- 6–8 tablespoons of ice water
- 1 cup of strawberries, hulled and sliced
- 1 cup of blueberries
- 1 cup of raspberries
- ¾ cup of granulated sugar
- 2 tablespoons of cornstarch
- 1 tablespoon of lemon juice
- 1 teaspoon of vanilla extract
- ½ teaspoon of ground cinnamon
- 1 tablespoon of butter, to dot on top
Instructions
- In a bowl, combine flour, salt, and sugar. Add cold diced butter and use a pastry cutter to mix until crumbly. Gradually add ice water, mixing until dough forms. Divide into two discs and refrigerate for 1 hour.
- In a mixing bowl, combine strawberries, blueberries, raspberries, sugar, cornstarch, lemon juice, vanilla, and cinnamon. Let the mixture sit for 15-20 minutes to thicken.
- Roll out one disc of dough to fit a 9-inch pie pan. Fill with berry mixture and dot with butter.
- Roll out the second disc of dough, cover the pie, and seal the edges. Cut slits or create a lattice design. Brush with egg wash and bake at 425°F for 15 minutes, then reduce to 350°F and bake for 30-35 minutes.
- Let the pie cool for 2 hours before serving.
Notes
- Do not overwork the dough to prevent a tough crust.
- Allow the pie to cool completely to set the filling before serving.
- For a golden crust, brush with egg wash before baking.
