Ingredients

  • 200g (1 cup) pitted dates, chopped
  • 1 tsp baking soda
  • 250ml (1 cup) boiling water
  • 100g (½ cup) unsalted butter, softened
  • 100g (½ cup) dark brown sugar
  • 2 tbsp black treacle (or molasses)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 170g (1⅓ cups) all-purpose flour
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp salt
  • ½ tsp baking powder
  • 150ml (⅔ cup) fresh orange juice
  • Zest of 1 orange
  • 100g (½ cup) caster sugar
  • 4 whole cloves
  • 1 tbsp butter

Instructions

  1. Prepare the cake batter by soaking chopped dates in boiling water with baking soda for 10 minutes.
  2. Cream together softened butter, dark brown sugar, and black treacle until light and fluffy, then add eggs and vanilla extract.
  3. Mash the soaked dates and add to the batter, then fold in the dry ingredients.
  4. Preheat the oven to 180°C (350°F) and prepare a baking tin.
  5. Pour the batter into the tin and bake for 35 to 40 minutes.
  6. Prepare the orange clove syrup by simmering orange juice, zest, sugar, cloves, and butter until thickened.
  7. Once the cake is baked, poke holes in it and pour the warm syrup over it, allowing it to soak in.
  8. Let the cake cool before serving.
