- 200g (1 cup) pitted dates, chopped
- 1 tsp baking soda
- 250ml (1 cup) boiling water
- 100g (½ cup) unsalted butter, softened
- 100g (½ cup) dark brown sugar
- 2 tbsp black treacle (or molasses)
- 2 large eggs
- 1 tsp vanilla extract
- 170g (1⅓ cups) all-purpose flour
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp salt
- ½ tsp baking powder
- 150ml (⅔ cup) fresh orange juice
- Zest of 1 orange
- 100g (½ cup) caster sugar
- 4 whole cloves
- 1 tbsp butter
Instructions
- Prepare the cake batter by soaking chopped dates in boiling water with baking soda for 10 minutes.
- Cream together softened butter, dark brown sugar, and black treacle until light and fluffy, then add eggs and vanilla extract.
- Mash the soaked dates and add to the batter, then fold in the dry ingredients.
- Preheat the oven to 180°C (350°F) and prepare a baking tin.
- Pour the batter into the tin and bake for 35 to 40 minutes.
- Prepare the orange clove syrup by simmering orange juice, zest, sugar, cloves, and butter until thickened.
- Once the cake is baked, poke holes in it and pour the warm syrup over it, allowing it to soak in.
- Let the cake cool before serving.
