Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix well, then add the pumpkin puree, eggs, and vanilla extract. Beat until smooth.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, checking for doneness with a toothpick.
- Allow the bars to cool in the pan for 10 minutes, then lift them out using the parchment paper and transfer to a wire rack to cool completely. Cut into rectangles for serving.
