Ingredients

- 1 cup red lentils
- 2 cups diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 2 cups vegetable broth
- 2 tablespoons olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and ginger; sauté until onion is translucent.
- Stir in curry powder, cumin, and turmeric; cook for 1 minute.
- Add diced tomatoes and vegetable broth; bring to a boil.
- Add lentils; reduce heat and simmer for 20-25 minutes until lentils are tender.
- Add salt to taste.
- Garnish with fresh cilantro before serving.
