  • 4 ounces cream cheese, softened

  • 1 cup Cool Whip
  • 3 cups toasted coconut, divided
  • 1 cup plus 2 tablespoons caramel, melted and divided
  • 1/4 cup mini chocolate chips
  • 1/4 cup semisweet chocolate chips, melted

Instructions

  1. Pulse Nilla wafers in a food processor until fine crumbs form. Mix crumbs with melted butter and sugar until combined. Press firmly into a greased 9-inch pie plate to form crust.
  2. Beat cream cheese until smooth. Gradually add sweetened condensed milk, vanilla, and salt; beat until combined. Fold in Cool Whip gently.
  3. Mix 2 cups toasted coconut with 1 cup caramel. Pour half the cream cheese mixture into crust, spread evenly, then layer coconut-caramel mixture on top. Spread remaining cream cheese mixture over this layer.
  4. Sprinkle remaining 1 cup toasted coconut and mini chocolate chips on top. Drizzle with remaining caramel and melted semisweet chocolate.
  5. Freeze pie for at least 4 hours until firm.
  6. Before serving, let pie sit 10-15 minutes at room temperature for easier slicing.
