To Die For Blueberry Muffins are a delightful treat with a tender crumb, juicy blueberries, and a sweet, crunchy topping. Perfect for any occasion!

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen blueberries
  • 1 tablespoon sugar for topping

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease it.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and fold gently. Do not overmix.
  5. Gently fold in the blueberries.
  6. Scoop the batter into the muffin tin, filling each cup 3/4 full, and sprinkle sugar on top.
  7. Bake for 20–25 minutes, until the tops are golden brown and a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a vegan version, use flax eggs and plant-based milk.
  • For a gluten-free option, use a gluten-free flour blend.
  • If using frozen blueberries, fold them in while still frozen to prevent color bleeding.
  • These muffins can be stored in an airtight container for up to 3 days at room temperature.
