- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh or frozen blueberries
- 1 tablespoon sugar for topping
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease it.
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, whisk together melted butter, milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and fold gently. Do not overmix.
- Gently fold in the blueberries.
- Scoop the batter into the muffin tin, filling each cup 3/4 full, and sprinkle sugar on top.
- Bake for 20–25 minutes, until the tops are golden brown and a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For a vegan version, use flax eggs and plant-based milk.
- For a gluten-free option, use a gluten-free flour blend.
- If using frozen blueberries, fold them in while still frozen to prevent color bleeding.
