- 2 tablespoons green curry paste
- 1 can coconut milk (400ml)
- 4 cups vegetable broth
- 2 cups mixed vegetables (bell peppers, carrots, zucchini)
- 1 cup tofu, cubed
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- Fresh basil leaves for garnish
Instructions
- In a pot, heat the green curry paste over medium heat for 1 minute.
- Add coconut milk and vegetable broth; stir until combined.
- Bring to a simmer and add mixed vegetables and tofu.
- Cook for 10 minutes or until vegetables are tender.
- Stir in soy sauce and lime juice.
- Serve hot, garnished with fresh basil leaves.
Notes
- Adjust the spiciness by adding more or less curry paste.
- Serve with rice or noodles for a complete meal.
