- 1 teaspoon salt
- 1 tablespoon granulated sugar
- ¾ cup unsalted butter, chilled and cubed
- 6–8 tablespoons ice water
- 4 cups tart cherries (fresh or frozen)
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- ½ teaspoon almond extract (optional)
- 1 tablespoon butter, cut into small bits
Instructions
- Combine the flour, salt, and sugar in a large bowl. Cut in the cubed butter until the mixture resembles coarse crumbs. Gradually add ice water until dough forms. Divide into two discs, wrap in plastic, and refrigerate for at least 1 hour.
- Preheat the oven to 425°F (220°C). Pit and prepare the cherries. If using frozen, thaw and drain them. Add sugar, cornstarch, lemon juice, and almond extract to cherries. Mix well.
- Roll out one disk of dough on a floured surface into a 12-inch circle and place it into a 9-inch pie pan. Fill with cherry mixture and dot with butter.
- Roll out the second dough disk and cover the pie, creating a lattice or full crust. Crimp the edges and cut slits for ventilation.
- Bake for 40-45 minutes until the crust is golden and the filling is bubbly. Cool before serving.

- Avoid overmixing the crust dough to keep it flaky.
- Adjust sugar based on the tartness of the cherries.
