Description

Taco stuffed potatoes are a delightful twist on traditional tacos, combining baked potatoes with seasoned ground beef, cheese, and various toppings.

Ingredients

Scale
  • 4 medium russet potatoes
  • 1 lb (450 g) ground beef
  • 1 packet (1 oz or 28 g) taco seasoning
  • 1 cup (100 g) shredded cheese (cheddar or Mexican blend)
  • 1/2 cup (120 g) sour cream
  • 1 cup (150 g) diced tomatoes (fresh or canned)
  • 1/4 cup (30 g) green onions, chopped
  • 1/4 cup (30 g) jalapeños, sliced (fresh or pickled)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Wash the russet potatoes thoroughly and dry them. Poke holes in each potato with a fork, rub with olive oil, and sprinkle with salt.
  2. Bake the potatoes directly on the oven rack or on a baking sheet until tender.
  3. While the potatoes are baking, heat a skillet over medium heat and cook the ground beef until browned. Drain excess fat and stir in taco seasoning.
  4. Once the potatoes are baked, cut them in half lengthwise and scoop out a small portion of the flesh to create a pocket.
  5. Fill each potato half with the seasoned ground beef and top with shredded cheese.
  6. Return the filled potatoes to the oven and bake for an additional 5-10 minutes until the cheese is melted.
  7. Remove from the oven and add toppings like diced tomatoes, green onions, jalapeños, and sour cream before serving.

Notes

  • Preheat the oven before baking the potatoes for even cooking.
  • Avoid overcooking the potatoes to prevent them from becoming mushy.
  • Don’t forget to poke holes in the potatoes to allow steam to escape.
  • Fill the potatoes generously but leave some space for toppings.
  • Taste the taco filling before assembling to adjust seasoning as needed.
