- 1 oz simple syrup (optional)

Instructions
- In a heatproof bowl over simmering water, whisk egg whites, sugar, cream of tartar, and salt until sugar dissolves and mixture reaches 160°F.
- Transfer to a stand mixer and whip on high speed until soft peaks form, about 5–6 minutes.
- Chill two martini or coupe glasses in the freezer.
- In a cocktail shaker, combine vodka, limoncello, Cointreau, lemon juice, and simple syrup. Add ice and shake vigorously for 20 seconds.
- Strain the cocktail into the chilled glasses, leaving room at the top.
- Pipe the meringue in a circular motion over each cocktail using a piping bag.
- Lightly toast the meringue with a kitchen torch until golden brown.
