Description

Ingredients

  • 1/4 tsp cream of tartar
  • 1/4 tsp kosher salt
  • 3 oz vodka
  • 2 oz limoncello
  • 1 oz Cointreau or triple sec
  • 1 oz (2 tbsp) fresh lemon juice
  • 1 oz simple syrup (optional)
  • Ice

Instructions

  1. In a heatproof bowl over simmering water, whisk egg whites, sugar, cream of tartar, and salt until sugar dissolves and mixture reaches 160°F.
  2. Transfer to a stand mixer and whip on high speed until soft peaks form, about 5–6 minutes.
  3. Chill two martini or coupe glasses in the freezer.
  4. In a cocktail shaker, combine vodka, limoncello, Cointreau, lemon juice, and simple syrup. Add ice and shake vigorously for 20 seconds.
  5. Strain the cocktail into the chilled glasses, leaving room at the top.
  6. Pipe the meringue in a circular motion over each cocktail using a piping bag.
  7. Lightly toast the meringue with a kitchen torch until golden brown.
