Instructions
- Preheat the oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
- In a large mixing bowl, mash the ripe banana. Add chopped spinach, honey or maple syrup, vegetable oil, vanilla extract, and eggs. Mix until smooth.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in chocolate chips if desired.
- Spoon the batter into the muffin cups, filling each about two-thirds full.
- Bake for 15-20 minutes, or until a toothpick inserted comes out clean. Let the muffins cool for 5 minutes in the tin, then transfer to a wire rack to cool completely.
