Description

Sweet Spinach Muffins combine the goodness of fresh spinach with the sweetness of bananas and honey, creating a nutritious and delicious treat.

Ingredients

Scale
  • 2 cups fresh spinach (washed and chopped)
  • 1 large ripe banana (mashed)
  • ½ cup honey or maple syrup
  • ⅓ cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup chocolate chips (optional)
  • Optional Ingredient Substitutions:
  • Whole wheat flour or gluten-free flour blend for healthier options
  • Agave nectar or brown sugar as sugar alternatives
  • Flax egg or applesauce for a vegan version
  • Unsweetened applesauce for oil

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. In a large mixing bowl, mash the ripe banana. Add chopped spinach, honey or maple syrup, vegetable oil, vanilla extract, and eggs. Mix until smooth.
  3. In another bowl, whisk together flour, baking soda, and salt.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in chocolate chips if desired.
  5. Spoon the batter into the muffin cups, filling each about two-thirds full.
  6. Bake for 15-20 minutes, or until a toothpick inserted comes out clean. Let the muffins cool for 5 minutes in the tin, then transfer to a wire rack to cool completely.

Notes

  • Do not overmix the batter to avoid dense muffins.
  • Ensure you use fresh spinach for the best flavor.
  • Let the muffins cool before serving to enhance flavor and texture.
