Description

These soft and fluffy sweet potato rolls are a comforting addition to any meal, combining the natural sweetness and vibrant color of sweet potatoes with the irresistible texture of freshly baked bread.


Ingredients

  • 1 medium sweet potato (about 250–290g), peeled and chopped
  • 3/4 cup whole milk, warmed to about 110°F
  • 2 and 1/4 teaspoons Platinum Yeast (1 standard size packet)
  • 1/3 cup honey, divided
  • 2 large eggs, at room temperature
  • 5 tablespoons unsalted butter, softened
  • 1 and 3/4 teaspoons salt
  • 5 and 1/2 cups bread flour, plus more as needed
  • Optional: 2 tablespoons melted butter and flaky sea salt for finishing

Instructions

  1. Peel and chop the sweet potato, boil until soft (about 10–12 minutes), drain and mash. Measure 1 cup mashed sweet potato and let cool.
  2. In a small bowl, mix warm milk, yeast, and 2 tablespoons of honey. Let it sit for 5 minutes until frothy.
  3. In a large mixing bowl, combine remaining honey, eggs, softened butter, mashed sweet potato, salt, and 1 cup flour. Mix until combined.
  4. Gradually add the remaining flour and knead using a mixer or by hand until the dough is soft and slightly sticky.
  5. Knead for 5 minutes more until smooth and elastic.
  6. Place dough in a greased bowl, cover, and let rise in a warm place for 1–2 hours or until doubled in size.
  7. Grease a 9×13 inch baking pan. Divide dough into 20 equal pieces, shape into balls, and place in the pan.
  8. Cover and let the rolls rise again for 30–45 minutes until puffy.
  9. Preheat oven to 350°F and bake for 25 minutes, rotating halfway. Tent with foil if browning too fast.
  10. Brush with melted butter and sprinkle with flaky sea salt (optional). Cool for 15 minutes before serving.

Notes

  • You can substitute sweet potato with pumpkin or butternut squash puree.
  • Use dairy-free milk and butter alternatives for a vegan option.
  • Freeze baked rolls in an airtight bag for up to 3 months.
