- 2 cups sweet potatoes, cooked and mashed (about 2 medium sweet potatoes)
- 3/4 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup evaporated milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 pre-made pie crust (9-inch, store-bought or homemade)
- Optional: whipped cream for serving
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the sweet potatoes by boiling or baking them until tender, then mash until smooth.
- If using a store-bought crust, place it in a 9-inch pie dish. If making your own, roll out the dough and fit it into the dish.
- In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
- Pour the sweet potato filling into the prepared pie crust and smooth the top.
- Bake in the preheated oven for 55-60 minutes, or until the filling is set and a toothpick comes out clean.
- Let the pie cool on a wire rack for at least 1 hour before serving.
