  • 1/2 cup evaporated milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 pre-made pie crust (9-inch, store-bought or homemade)
  • Optional: whipped cream for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the sweet potatoes by boiling or baking them until tender, then mash until smooth.
  3. If using a store-bought crust, place it in a 9-inch pie dish. If making your own, roll out the dough and fit it into the dish.
  4. In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
  5. Pour the sweet potato filling into the prepared pie crust and smooth the top.
  6. Bake in the preheated oven for 55-60 minutes, or until the filling is set and a toothpick comes out clean.
