- 2 cups sweet potatoes (cooked and mashed, about 2 medium sweet potatoes)
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 2 large eggs
- ½ cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 cup all-purpose flour (for crumble topping)
- ½ cup brown sugar (for crumble topping)
- ½ cup rolled oats
- ½ cup unsalted butter (1 stick, melted, for crumble topping)
- ½ teaspoon ground cinnamon (for crumble topping)
Instructions
- Prepare the sweet potatoes by washing, peeling, cutting into chunks, boiling until tender, and mashing until smooth.
- Make the crust by mixing flour, sugar, and salt, then adding cold butter and ice water until the dough forms. Chill for at least 30 minutes.
- Prepare the filling by combining mashed sweet potatoes, sugars, eggs, heavy cream, vanilla, spices, and salt until smooth.
- Assemble the bars by rolling out the chilled dough, pressing it into a baking dish, and pouring the filling over the crust.
- Prepare the crumble topping by mixing flour, brown sugar, oats, melted butter, and cinnamon until crumbly, then sprinkle over the filling.
- Bake at 350°F (175°C) for 30-35 minutes until the filling is set and the topping is golden brown. Cool for at least 30 minutes before serving.

- Store bars in an airtight container in the refrigerator for up to three days.
