  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup all-purpose flour (for crumble topping)
  • ½ cup brown sugar (for crumble topping)
  • ½ cup rolled oats
  • ½ cup unsalted butter (1 stick, melted, for crumble topping)
  • ½ teaspoon ground cinnamon (for crumble topping)

Instructions

  1. Prepare the sweet potatoes by washing, peeling, cutting into chunks, boiling until tender, and mashing until smooth.
  2. Make the crust by mixing flour, sugar, and salt, then adding cold butter and ice water until the dough forms. Chill for at least 30 minutes.
  3. Prepare the filling by combining mashed sweet potatoes, sugars, eggs, heavy cream, vanilla, spices, and salt until smooth.
  4. Assemble the bars by rolling out the chilled dough, pressing it into a baking dish, and pouring the filling over the crust.
  5. Prepare the crumble topping by mixing flour, brown sugar, oats, melted butter, and cinnamon until crumbly, then sprinkle over the filling.
  6. Bake at 350°F (175°C) for 30-35 minutes until the filling is set and the topping is golden brown. Cool for at least 30 minutes before serving.
