Instructions

- Cook and mash the sweet potato until smooth.
- In a large bowl, mix the dry ingredients: flour, brown sugar, cinnamon, nutmeg, baking powder, and salt.
- In another bowl, combine the wet ingredients: eggs, mashed sweet potato, milk, and melted butter.
- Mix the wet and dry ingredients until just combined.
- Prepare the streusel topping by mixing flour, brown sugar, chopped pecans, butter, and cinnamon until crumbly.
- Divide the muffin batter into the prepared muffin cups and top with streusel.
