Ingredients

- Eggs: 2 large

Instructions
- Preheat your oven to 350°F (175°C). Peel and chop the sweet potatoes into small chunks and cook in boiling water for 15-20 minutes until tender. Mash and set aside.
- In a separate bowl, combine the all-purpose flour and half of the chopped pecans to make the crust.
- In a large mixing bowl, combine the cooled mashed sweet potatoes, brown sugar, melted butter, eggs, vanilla extract, ground cinnamon, and salt. Mix until smooth.
- Gradually add the flour and pecan mixture to the sweet potato filling and stir gently until just combined. Pour into a greased 9×13-inch baking dish and spread evenly. Sprinkle remaining pecans on top.
- Bake for 30-35 minutes until edges are set and center feels slightly firm. Check doneness with a toothpick.
- Let cool in the pan for at least 15 minutes, then cut into squares or bars. Serve warm or at room temperature.
