Ingredients

  • Sweet Potatoes: 2 cups, mashed (about 2 medium sweet potatoes)
  • Pecans: 1 cup, chopped
  • Brown Sugar: 1 cup, packed
  • Butter: 1/2 cup (1 stick), melted
  • All-Purpose Flour: 1 cup
  • Eggs: 2 large
  • Vanilla Extract: 1 teaspoon
  • Ground Cinnamon: 1 teaspoon
  • Salt: 1/2 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C). Peel and chop the sweet potatoes into small chunks and cook in boiling water for 15-20 minutes until tender. Mash and set aside.
  2. In a separate bowl, combine the all-purpose flour and half of the chopped pecans to make the crust.
