Description

Sweet Potato Maple Doughnuts are a delightful fusion of sweet potatoes and maple syrup, creating a soft and fluffy treat perfect for breakfast or as a snack.

Ingredients

Scale
  • 1 cup sweet potatoes: Cooked and mashed, about 1 medium sweet potato.
  • 2 cups all-purpose flour: This forms the base of your doughnuts.
  • 2 teaspoons baking powder: Helps the doughnuts rise.
  • 1 teaspoon ground cinnamon: Enhances flavor and aroma.
  • 1/2 teaspoon ground nutmeg: Adds warmth and complexity.
  • 1/2 cup maple syrup: Provides natural sweetness.
  • 2 large eggs: Binds the ingredients together.
  • 1 teaspoon vanilla extract: Adds depth to the flavor.
  • 1/4 cup powdered sugar: For dusting.
  • Oil for frying: Use vegetable or canola oil, heated to 350°F (175°C).

Instructions

  1. Prepare the sweet potatoes by peeling, chopping, boiling or steaming until tender, then mash and cool.
  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, cinnamon, and nutmeg.
  3. In another bowl, mix the cooled mashed sweet potatoes, maple syrup, eggs, and vanilla extract until smooth.
  4. Gradually add the sweet potato mixture to the dry ingredients and stir gently until just combined.
  5. Lightly flour your work surface, turn out the dough, and pat it down to about 1/2 inch thick. Cut out doughnut shapes.
  6. Heat oil in a deep pot to 350°F (175°C) and fry the doughnuts for 2-3 minutes on each side until golden brown.
  7. Prepare the maple glaze by warming additional maple syrup and mixing in powdered sugar for desired consistency.
  8. Glaze the warm doughnuts and allow the glaze to set before serving.

Notes

  • Choose firm and smooth sweet potatoes for the best flavor.
  • Avoid overmixing the batter to keep the doughnuts light and fluffy.
  • Experiment with different spices and glazes for unique flavors.
