Ingredients
Scale
- 1 cup sweet potatoes: Cooked and mashed, about 1 medium sweet potato.
- 2 cups all-purpose flour: This forms the base of your doughnuts.
- 2 teaspoons baking powder: Helps the doughnuts rise.
- 1 teaspoon ground cinnamon: Enhances flavor and aroma.
- 1/2 teaspoon ground nutmeg: Adds warmth and complexity.
- 1/2 cup maple syrup: Provides natural sweetness.
- 2 large eggs: Binds the ingredients together.
- 1 teaspoon vanilla extract: Adds depth to the flavor.
- 1/4 cup powdered sugar: For dusting.
- Oil for frying: Use vegetable or canola oil, heated to 350°F (175°C).
Instructions
- Prepare the sweet potatoes by peeling, chopping, boiling or steaming until tender, then mash and cool.
- In a large bowl, whisk together the dry ingredients: flour, baking powder, cinnamon, and nutmeg.
- In another bowl, mix the cooled mashed sweet potatoes, maple syrup, eggs, and vanilla extract until smooth.
- Gradually add the sweet potato mixture to the dry ingredients and stir gently until just combined.
- Lightly flour your work surface, turn out the dough, and pat it down to about 1/2 inch thick. Cut out doughnut shapes.
- Heat oil in a deep pot to 350°F (175°C) and fry the doughnuts for 2-3 minutes on each side until golden brown.
- Prepare the maple glaze by warming additional maple syrup and mixing in powdered sugar for desired consistency.
- Glaze the warm doughnuts and allow the glaze to set before serving.
Notes
- Choose firm and smooth sweet potatoes for the best flavor.
- Avoid overmixing the batter to keep the doughnuts light and fluffy.
- Experiment with different spices and glazes for unique flavors.
