  • 1/4 cup white sugar
  • 1/4 cup butter, melted
  • 2 pounds sweet potatoes
  • 3 packages (8 ounces each) cream cheese, softened
  • 7/8 cup white sugar
  • 1/3 cup sour cream
  • 1/4 cup heavy whipping cream
  • 3 eggs, room temperature
  • 3/4 cup packed brown sugar
  • 1/4 cup butter
  • 1/4 cup heavy whipping cream
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into a 9 1/2-inch springform pan. Bake for 10 minutes and set aside.
  3. Wash sweet potatoes, bake at 350°F for 1 hour. Peel and puree to get about 1 1/2 cups of sweet potato puree.
  4. Beat cream cheese and 3/4 cup sugar until smooth. Add sour cream, 1/4 cup cream, and sweet potato puree. Mix well.
  5. Beat in eggs one at a time. Pour the filling into the prepared crust and bake for 1 hour.
  6. Turn off the oven and leave the cheesecake to cool inside for 1 hour with the oven door ajar.
  7. Prepare the topping: melt brown sugar, butter, and 1/4 cup cream in a saucepan. Stir in chopped pecans. Let it cool.
  8. Once the cheesecake has cooled, pour the pecan topping over the cheesecake and spread evenly.
