A delightful and unique bubble tea made with sweet potatoes, coconut milk, and chewy tapioca pearls.
Ingredients
- Sweet Potato: One medium sweet potato (about 200g)
- Coconut Milk: Half a cup (120ml)
- Tapioca Pearls: Half a cup (100g)
- Sugar: Two tablespoons (30g)
- Water: One cup (240ml)
- Salt: A pinch
- Optional: Vanilla Extract: Half a teaspoon
- Optional: Crushed Sweet Potato for garnish
- Optional: Ice Cubes
- Optional: Colorful Straws
- Optional: Additional Toppings like whipped cream, fruits, or cinnamon
Instructions
- Prepare the sweet potato by peeling and cutting it into small cubes. Boil in water for 15-20 minutes until tender.
- Blend the cooked sweet potato with one cup of water, sugar, salt, and optional vanilla extract until smooth.
- Cook the tapioca pearls in boiling water according to package instructions (about 5-10 minutes). Drain and rinse under cold water.
- Assemble the drink by adding tapioca pearls to a glass, then pouring the sweet potato mixture over them.
- Top with coconut milk and optional crushed sweet potato. Add ice cubes if desired, and serve with a colorful straw.

- Choose medium-sized, firm sweet potatoes for the best flavor.
