Description
Sweet Potato Brown Sugar Bars are a delightful dessert that combines the natural sweetness of sweet potatoes with the rich flavor of brown sugar, making them soft, chewy, and packed with warm spices.
Ingredients
- Sweet potatoes: 2 cups, cooked and mashed (about 2 medium sweet potatoes)
- Brown sugar: 1 cup, packed
- Butter: 1/2 cup (1 stick), melted
- Eggs: 2 large
- Vanilla extract: 1 teaspoon
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/2 teaspoon
- All-purpose flour: 1 cup
- Salt: 1/4 teaspoon
Instructions
- Preheat your oven to 350°F (175°C). Peel and chop the sweet potatoes into small pieces, then cook them in boiling water until tender (about 15-20 minutes). Mash until smooth.
- In a large mixing bowl, combine melted butter and brown sugar, stirring until well blended. Add eggs one at a time, mixing thoroughly after each addition, then stir in vanilla extract and fold in the mashed sweet potatoes.
- In a separate bowl, whisk together flour, cinnamon, nutmeg, and salt. Gradually add this dry mixture to the sweet potato mixture, stirring gently until just combined. Prepare a 9×13-inch baking dish by greasing it or lining it with parchment paper, then pour the batter into the dish.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares or rectangles.
Notes
- Choose firm, smooth sweet potatoes for the best flavor.
- Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- For gluten-free bars, substitute all-purpose flour with a gluten-free flour blend.
- For a vegan version, replace eggs with applesauce or flaxseed meal and butter with coconut oil or vegan butter.
