Description

Sweet potato blondies are a healthy, chewy dessert that combines the sweetness of sweet potatoes with the rich, buttery flavor of blondies.


Ingredients

  • 1 cup mashed sweet potato (about 1 medium sweet potato)
  • 1/2 cup creamy peanut butter or almond butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup melted coconut oil or unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chocolate chips or nuts (optional)

Instructions

  1. Prepare the sweet potato by microwaving it for 5-7 minutes until soft. Mash it until smooth.
  2. In a bowl, combine mashed sweet potato, peanut butter, brown sugar, granulated sugar, melted coconut oil or butter, eggs, and vanilla extract. Mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Gradually add to the wet ingredients and mix gently.
  4. Fold in optional chocolate chips or nuts.
  5. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan. Pour batter into the pan and spread evenly.
  6. Bake for 25-30 minutes or until golden and a toothpick comes out clean. Let cool for 10 minutes before transferring to a wire rack to cool completely.
