A delicious and hearty meal that combines sweet and savory flavors with sweet potatoes, apples, and sausage.

Ingredients

  • Sweet Potatoes: 2 medium sweet potatoes, peeled and diced (about 500 grams)
  • Apples: 2 medium apples, cored and diced (about 300 grams)
  • Italian Sausage: 1 pound (450 grams) of Italian sausage, casings removed
  • Onion: 1 medium onion, diced
  • Garlic: 2 cloves garlic, minced
  • Olive Oil: 2 tablespoons
  • Cinnamon: 1 teaspoon ground cinnamon
  • Sage: 1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
  • Salt and Pepper: To taste

Instructions

  1. Prepare the ingredients by peeling and dicing the sweet potatoes, coring and dicing the apples, dicing the onion, and mincing the garlic.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat and cook the Italian sausage until browned, about 5-7 minutes. Transfer to a plate.
  3. Add the remaining tablespoon of olive oil to the skillet, sauté the diced onion for 3-4 minutes, then add the minced garlic and cook for an additional minute.
  4. Stir in the diced sweet potatoes, season with salt, pepper, and cinnamon, and cook for about 10-12 minutes until tender.
  5. Add the diced apples and cooked sausage back to the skillet, stir to combine, and cook for an additional 5 minutes.
  6. Sprinkle chopped sage over the mixture, stir, and cook for another minute. Adjust seasoning if needed and serve.
