Ingredients
- Sweet Potatoes: 2 medium sweet potatoes, peeled and diced (about 500 grams)
- Apples: 2 medium apples, cored and diced (about 300 grams)
- Italian Sausage: 1 pound (450 grams) of Italian sausage, casings removed
- Onion: 1 medium onion, diced
- Garlic: 2 cloves garlic, minced
- Olive Oil: 2 tablespoons
- Cinnamon: 1 teaspoon ground cinnamon
- Sage: 1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
- Salt and Pepper: To taste
Instructions
- Prepare the ingredients by peeling and dicing the sweet potatoes, coring and dicing the apples, dicing the onion, and mincing the garlic.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat and cook the Italian sausage until browned, about 5-7 minutes. Transfer to a plate.
- Add the remaining tablespoon of olive oil to the skillet, sauté the diced onion for 3-4 minutes, then add the minced garlic and cook for an additional minute.
- Stir in the diced sweet potatoes, season with salt, pepper, and cinnamon, and cook for about 10-12 minutes until tender.
- Add the diced apples and cooked sausage back to the skillet, stir to combine, and cook for an additional 5 minutes.
- Sprinkle chopped sage over the mixture, stir, and cook for another minute. Adjust seasoning if needed and serve.
