- 4 large bell peppers
- 1 cup quinoa
- 2 medium sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional: Shredded cheese for topping
Instructions
- Rinse 1 cup of quinoa under cold water and combine with 2 cups of water in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes. Let sit covered for 5 minutes.
- Peel and dice 2 sweet potatoes, toss with olive oil, salt, and pepper, and roast at 375°F (190°C) for 20-25 minutes.
- In a large bowl, mix cooked quinoa, roasted sweet potatoes, black beans, corn, cumin, chili powder, lime juice, and cilantro. Season with salt and pepper.
- Prepare bell peppers by cutting off the tops and removing seeds. Place them upright in a baking dish.
- Stuff each pepper with the quinoa and sweet potato mixture, packing it gently. Optionally, sprinkle cheese on top.
- Cover with foil and bake at 375°F (190°C) for 25 minutes, then remove foil and bake for an additional 10-15 minutes.
