Ingredients

  • 4 large bell peppers
  • 1 cup quinoa
  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: Shredded cheese for topping

Instructions

  1. Rinse 1 cup of quinoa under cold water and combine with 2 cups of water in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes. Let sit covered for 5 minutes.
  2. Peel and dice 2 sweet potatoes, toss with olive oil, salt, and pepper, and roast at 375°F (190°C) for 20-25 minutes.
  3. In a large bowl, mix cooked quinoa, roasted sweet potatoes, black beans, corn, cumin, chili powder, lime juice, and cilantro. Season with salt and pepper.
  4. Prepare bell peppers by cutting off the tops and removing seeds. Place them upright in a baking dish.
  5. Stuff each pepper with the quinoa and sweet potato mixture, packing it gently. Optionally, sprinkle cheese on top.
  6. Cover with foil and bake at 375°F (190°C) for 25 minutes, then remove foil and bake for an additional 10-15 minutes.
