Description
Sweet Potato and Maple Blondies are a delightful twist on the classic blondie dessert, made with creamy, mashed sweet potatoes and sweetened with rich maple syrup.
Ingredients
- Sweet potatoes: 1 cup, mashed (about 1 medium sweet potato)
- Maple syrup: 1/2 cup
- Brown sugar: 1/2 cup, packed
- Butter: 1/2 cup (1 stick), melted
- Eggs: 2 large
- Vanilla extract: 1 teaspoon
- All-purpose flour: 1 cup
- Baking powder: 1 teaspoon
- Chopped walnuts: 1/2 cup (optional)
- Salt: 1/4 teaspoon
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
- Peel and chop the sweet potato, then boil or steam until tender, about 15-20 minutes. Mash and set aside to cool.
- In a large mixing bowl, combine melted butter, maple syrup, and brown sugar. Whisk until well combined, then add eggs and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Fold the mashed sweet potatoes into the wet mixture, then gradually add the dry ingredients, stirring gently until just combined. If using, fold in walnuts.
- Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, checking for doneness with a toothpick.
- Let the blondies cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
Notes
- Choose firm, smooth sweet potatoes for the best flavor.
- Store blondies in an airtight container at room temperature for up to three days, or refrigerate for longer storage.
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- Consider adding nuts or chocolate chips for extra flavor and texture.
