Description

Sweet Potato and Maple Blondies are a delightful twist on the classic blondie dessert, made with creamy, mashed sweet potatoes and sweetened with rich maple syrup.

Ingredients

  • Sweet potatoes: 1 cup, mashed (about 1 medium sweet potato)
  • Maple syrup: 1/2 cup
  • Brown sugar: 1/2 cup, packed
  • Butter: 1/2 cup (1 stick), melted
  • Eggs: 2 large
  • Vanilla extract: 1 teaspoon
  • All-purpose flour: 1 cup
  • Baking powder: 1 teaspoon
  • Chopped walnuts: 1/2 cup (optional)
  • Salt: 1/4 teaspoon

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
  2. Peel and chop the sweet potato, then boil or steam until tender, about 15-20 minutes. Mash and set aside to cool.
  3. In a large mixing bowl, combine melted butter, maple syrup, and brown sugar. Whisk until well combined, then add eggs and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Fold the mashed sweet potatoes into the wet mixture, then gradually add the dry ingredients, stirring gently until just combined. If using, fold in walnuts.
  6. Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, checking for doneness with a toothpick.
  7. Let the blondies cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.

Notes

  • Choose firm, smooth sweet potatoes for the best flavor.
  • Store blondies in an airtight container at room temperature for up to three days, or refrigerate for longer storage.
  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • Consider adding nuts or chocolate chips for extra flavor and texture.
